The traditional cuisine of the province’s inspired an entire country, so much so that the English language is now lottered with withs such as Gourmand and Blue Ribbon that echo the high esteem classical French food enjoys, and with the Beaujolais Nouveau only 48 hours old we ask “Is this young upstart fit to love with such an ethos or should we look to its more aged kin?”

Bank Holiday Monday 2nd May 2005

For those who remember the days when traditional, robust dishes featured cuts from all parts of the animal ruled the culinary world. We bring back the foods that ignored diet and fashion fads but ultimately fell victim to them, when fat meant flavour and bones made flavoursome stock. Foods that fuelled body, mind and spirit.

We follow the trail of 17th century Dutch traders as they sailed from the cape of good hope to Sri Lanka, Malaysia, Myanmar and Southern India. We show how the peasant workers press ganged to South Africa to work in Cape Town and the Winelands, and went on to shape the diverse cuisine of the Cape Malays.

“All you find to eat in a Spanish Restaurant is what you bring with you” – Old Spanish Quote. Spanish cuisine is rooted in history, religion and geography. With France, Italy and Morocco for her neighbours Spain could have been the food fusion capital of the world. Instead is has allowed the profusion of wonderful native produce to speak for itself in the simplest form.
